Payn Fondew (1390, England)


Medieval England's wine, raisin and honey bread pudding is something else, and not in a good way.

Ingredients: (Serves four)

4 slices of wholemeal bread
1 cup of red wine
1 egg white
1/4 cup raisins
1/2 cup honey
1/8 cup caster sugar
1/2 tsp cinnamon
1/4 tsp ground ginger
1/4 tsp ground cloves
Sprinkle of dried coriander
Sprinkle of caster sugar 

  1. In a bowl, beat the egg white into the wine. Add with raisins, honey, sugar, and spices into a pot and let simmer.
  2. Slowly stir as you add the bread. Simmer until the bread absorbs the liquid.
  3. Sprinkle with coriander/sugar and serve forth.
